Taming Young, Tannic Wines

We’ve all, in our zeal to try a new red, opened the bottle, poured a glass, and thought “Wow, this needs time to age or at least breathe.”

The best way to prevent this scenario is to decant our tempting young thing. Decanting a wine is simply pouring it from the bottle into a larger receptacle. This oxygenation helps release the wine’s aromas, and softens the tannic edge of red wine. For younger tannic reds, the larger the decanter bowl, the better, as it maximizes the surface area of the wine. The Cellar has a wide selection of decanters to suit every style, classic to modern, starting at $30.

Some funnels are specifically designed to aerate the wine as they spray the wine in different directions to maximize oxygenation. The pewter aerator (right) from Royal Selangor has won many design awards and elegantly sprays wine from six holes. At the cellar we have a wide selection of aerating funnels, including a pewter funnel fashioned from the face of Bacchus where the wine sprays out of his mouth (coming soon).

If you are decanting a mature wine, this is a different story and we have decanters and funnels suitable for aged wines too—come on in and ask us about it. Decanters and funnels are much more than a fancy way of serving wine (although they’re good for that, too). A properly decanted wine will add a whole new level of pleasure to enjoying your favourite wines. — A.H.
